Cheese is like a language shared between many cultures. We wanted to make a place in the East Kootenays where that language can be explored. We're not talking about bright orange Kraft cheddar. We're talking about rich milk sourced from pastured animals, aged and cultured to carry specific notes that speak to terrain, seasons, microclimate, history. We're talking about cooperatives between small farmers, a fair relationship between land and grazer, and a dedication to the aging process.
Our love for real cheese goes deep. It goes beyond cheese itself. We wanted to create the ultimate experience by offering cheese's highest quality compliments.
Fresh sourdough ciabattas. Juicy stuffed olives. Textured crackers. Sweet quince paste.
And then we realized that our passion didn't end there, but extended to many other cultured foods.
Tangy sauerkraut. Homemade kombucha. Fresh brewed ginger beer.
But why stop there? It seemed like one "creme" craving would be left wanting. We needed to round out the experience with rich and simple ice cream, created with only the best ingredients like organic local cream and eggs.
